Dark chocolate and peanut butter

The darker the better, chocolate is a pleasure for all seasons. But you can’t forget the white or milk varieties.  They, too, have a place in the dessert canon. A supporting player to the peanut butter and roasted peanuts, the “food of the gods” is used as a creamy shiny layer on the Peanut  Butter Mousse Tart with Caramel. Inspired by those peanut butter cups wrapped in the familiar orange wrapper, this dessert packs richness and textural contrast into every bite.  Gilding the lily even further, there is creamy seductive caramel adding a luscious layer to the ensemble. And instead of crackling chocolate as the base, there is an easy-to-make, fine-crumbed shell of pulverized graham crackers, enriched with a bit of butter and a hint of cinnamon.
