Crisp and pleasantly granular in texture, the current crop of fruit is equally at home eaten simply out of hand, thinly sliced into salads, julienned as a crisp garnish to hamachi or steak tartare, or baked into a caramelized puff pastry galette. Simply peel and core and you’re ready to invent.
